Protein Packed V-Burrito

Protein Packed V-Burrito

Happy National Burrito Day!

Celebrate with our delicious vegan burrito recipe, filled with delicious melted Cheezly and packed with plant-based protein!

Serves 4

  • 6 vegan wraps
  • 500g of rice
  • 1 tbsp of oil
  • 1 pack of VBites Beeph Mince (Chkn/Beeph Chunks can also be used)
  • 1 tin of Cheezly Beans
  • 1 onion finely chopped
  • 4 garlic cloves finely chopped
  • 400g of chopped tomatoes
  • Lettuce 
  • 1/2 a block of Cheddar Cheezly
  • 1 tbsp of dried cumin
  • 1 tsp of cayenne pepper
  • 1 tsp of chilli power
  • 1 tsp of paprika

You can also add:

  • 1 tin of refried beans
  • Salsa - 4- 6 medium tomatoes, half an onion, 1 garlic glove and a splash of lime juice  
  • Guacamole - 1 large avocado, half an onion, half a tomato, 1 tsp garlic, salt and pepper and a splash of lime. Half a chilli can be added optionally.

Method:

Cook the VBites Beeph Mince as directed on the pack. Then add the garlic cloves finely chopped, chopped tomatoes, onion and let it simmer.

Meanwhile cook the rice and place it into In a large bowl, mix together the cooked rice, cooked VBites Cheezly Beans, dried cumin and cayenne pepper.

Guacamole: Cut the avocado in half, remove the pit, and scoop out the flesh into a small bowl. Mash the avocado with a fork and add the extra ingredients above to taste. Squeeze lime juice over the mixture and stir well.

Warm the tortillas in the microwave or on a skillet. 

Place the tortillas onto a place and add lettuce, then divide the rice and mince mixtures evenly among the tortillas, placing it in the centre of each one.

Top with grated Cheddar Cheezly.

Fold the bottom edge of the tortilla up over the filling, then fold in the sides, and roll up tightly.

Serve immediately or wrap the burritos in foil to keep warm.
